It has been a while that I posted a cooking post, so here is one again! This is a recipe I make very often because it's declicious, healthy and really easy to make.
Ingredients for 3-4 persons:
500 ml of vegetable broth
4 red sweet peppers
2 two teaspoons of fresh thyme leaves
2 toes of garlic
1 spoon of tomato paste
1 onion
Olive oil
Salt
Pepper
Start with preheating the oven to 200 degrees celcius. After that you put the sweet peppers in a baking dish and put some olive oil on both sides of the peppers. Put them into the oven and turn them over when one side of the pepper is a little brown. When the other side is brown too, remove the dish from the oven and let it cool down on your sink.
When the peppers have cooled a bit, remove the sheet and seed lists and chop them up in little cubes. Blend 90% of the cubes.
Heat some oil in your stockpot and saute the chopped onion, garlic and thyme leaves for 5 minutes on low heat. After that you can add the blended peppers, pepper cubes, vegetable broth and tomato paste. Turn up the heat and let the soup boil for like 5 minutes. Add salt and pepper to spice the soup up a bit!
